In Sweden it is common with a special variety of smörgåsbord, where ham, meatballs and herring play a prominent role. In Germany, France, and Austria, goose and pork are favored. Beef, ham, and chicken in various recipes are popular throughout the world. The Maltese traditionally serve Imbuljuta tal-Qastan, a chocolate and chestnuts beverage, after Midnight Mass and throughout the Christmas season. Slovaks prepare the traditional Christmas bread potica, bûche de Noël in France, panettone in Italy, and elaborate tarts and cakes.

Early the next morning, party attendees usually gather to have the traditional winter breakfast of hot chocolate and fried pastry (chocolate con churros). In Sweden, New Year's Eve is usually celebrated with families or with friends. A few hours before and after midnight, people usually party and eat a special dinner, often three courses. New Year's Eve is celebrated with large fireworks displays throughout the country, especially in the cities. People over the age of 18 are allowed to buy fireworks, which are sold by local stores or by private persons. While watching or lighting fireworks at midnight, people usually drink champagne.

Desserts include the iconic Dobos Cake, strudels (rétes), filled with apple, cherry, poppy seed or cheese, Gundel pancake, plum dumplings (szilvás gombóc), somlói dumplings, dessert soups like chilled sour cherry soup and sweet chestnut puree, gesztenyepüré (cooked chestnuts mashed with sugar and rum and split into crumbs, topped with whipped cream). Perec and kifli are widely popular pastries.

Vienna

The wine is often drunk as a Spritzer ("G'spritzter") with sparkling water. The Grüner Veltliner, a dry white wine, is the most widely cultivated wine in Austria. Beer is next in importance to wine. Vienna has a single large brewery, Ottakringer, and more than ten microbreweries. A "Beisl" is a typical small Austrian pub, of which Vienna has many. Also, local soft drinks such as Almdudler are very popular around the country as an alternative to alcoholic beverages, placing it on the top spots along American counterparts such as Coca-Cola in terms of market share.

Italian cuisine

Wines from the Nebbiolo grape such as Barolo and Barbaresco are produced as well as wines from the Barbera grape, fine sparkling wines, and the sweet, lightly sparkling, Moscato d'Asti. The region is also famous for its Vermouth and Ratafia production. Castelmagno is a prized cheese of the region. Piedmont is also famous for the quality of its Carrù beef (particularly bue grasso, "fat ox"), hence the tradition of eating raw meat seasoned with garlic oil, lemon, and salt; carpaccio; Brasato al vino, wine stew made from marinated beef; and boiled beef served with various sauces.

Children can have rice pudding (tejberizs) or Semolina Cream (tejbegríz) for breakfast topped with cocoa powder and sugar or with fruit syrup. Hot drinks are preferred for breakfast. Villásreggeli or brunch, (literally breakfast with fork) is a more luxurious big breakfast given on special occasions or holidays. Often guests are invited. Deviled eggs, cold steak, cold salads, salmon-omelet, pancakes, a spicy cheese spread made with sheep milk cheese called körözött, caviar, foie gras, fruit salads, compote, fruit yogurts, fruit juices, champagne and pastries, cakes and cookies may be served.

Joulupöytä (translated "Yule table") is the traditional assortment of foods served at Christmas in Finland, similar to the Swedish julbord. It contains many different dishes, most of them typical for the season. The main dish is usually a large Christmas ham, which is eaten with mustard or bread along with the other dishes. Fish is also served (often lutefisk and gravlax), and the ham is served with laatikkos, casseroles made with swede, potato and carrot, occasionally liver. The traditional Christmas beverage is either alcoholic or non-alcoholic mulled wine (glögi in Finnish).

Sometimes served hot in the winter but usually cold. Danskvand, or hvid vand, is simply carbonated water. It is often flavoured with citrus. Saftevand, a diluting juice made from concentrated and sweetened fruit syrup. The syrup is mixed with plain water by the consumer and served right away.

Stollen

Over the centuries, the bread changed from being a simple, fairly tasteless "bread" to a sweeter bread with richer ingredients, such as marzipan, although traditional Stollen is not as sweet, light and airy as the copies made around the world. Commercially made Stollen has become a popular Christmas food in Britain in recent decades, complementing traditional dishes such as mince pies and Christmas pudding. All the major supermarkets sell their own versions, and it is often baked by home bakers. Every year Stollenfest takes place in Dresden. This historical tradition ended only in 1918 with the fall of the monarchy, and started again in 1994, but the idea comes from Dresden’s history.

French cuisine

A typical French Christmas dish is turkey with chestnuts. Other common dishes are smoked salmon, oysters, caviar and foie gras. The Yule log is a very French tradition during Christmas. Chocolate and cakes also occupy a prominent place for Christmas in France. This cuisine is normally accompanied by Champagne. Tradition says that thirteen desserts complete the Christmas meal in reference to the twelve apostles and Christ. The modern restaurant has its origins in French culture. Prior to the late 18th century, diners who wished to "dine out" would visit their local guild member's kitchen and have their meal prepared for them.

Champagne

Champagne is sparkling wine or, in the EU countries, legally only that sparkling wine which comes from the Champagne region of France. Where EU law applies, this alcoholic drink is produced from grapes grown in the Champagne region of France following rules that demand, among other things, secondary fermentation of the wine in the bottle to create carbonation, specific vineyard practices, sourcing of grapes exclusively from specific parcels in the Champagne appellation and specific pressing regimes unique to the region.

The appellations are not necessarily unique: Cava may refer either to a quality sparkling wine psr produced in Spain or to a Greek table wine which has been aged (as a transliteration of "Κάβα"). The Regulation laying down general rules on the definition, description and presentation of spirit drinks (No 1576/89) provides for a double system of protection of spirit descriptions. Spirits are divided into 21 categories, which each have rules for fabrication and minimum strength.

Sicily

The Hundred Horse Chestnut (Castagno dei Cento Cavalli), in Sant'Alfio, on the eastern slopes of Mount Etna, is the largest and oldest known chestnut tree in the world at 2,000 – 4,000 years old. Sicily has a wide variety of fauna. Species include fox, least weasel, pine marten, roe deer, wild boar, crested porcupine, hedgehog, common toad, Vipera aspis, golden eagle, peregrine falcon, hoopoe and black-winged stilt. The Zingaro Natural Reserve is one of the best examples of unspoiled coastal wilderness in Sicily. Surrounding waters including the Strait of Messina are home to varieties of birds and marine life, including larger species such as flamingos and fin whales.

Panettone

By the end of World War II, panettone was cheap enough for anyone and soon became the country's leading Christmas sweet. Lombard immigrants to Argentina, Uruguay, Mexico, Venezuela and Brazil also brought their love of panettone, and panettone is enjoyed for Christmas with hot cocoa or liquor during the holiday season, which became a mainstream tradition in those countries. In some places, it replaces the king cake. Panettone is widely available in South America, including in Argentina, Brazil, Chile (see: Pan de Pascua), Ecuador, Colombia, Venezuela, Bolivia, and Peru. It is known in Spanish as panetón or pan dulce, and as panetone in Brazilian Portuguese.

Churro

Churros are almost always eaten with tsokolate drinks (a pairing known as churros con tsokolate), which can also serve as a dip. They are popular during the Christmas season. Réveillon

One traditional dish is turkey with chestnuts. Réveillons in Quebec will often include some variety of tourtière. Dessert may consist of a Yule log, known as a bûche de Noël. In Provence, the tradition of the thirteen desserts is followed: 13 desserts are served, almost invariably including pompe à l'huile (a flavoured bread), dates, etc. Quality wine is usually consumed at such dinners, often with champagne or similar sparkling wines as a conclusion. There are certain traditional differences of character between the Christmas and New Year's Day réveillons.

Christmas cake is a type of fruitcake served at Christmas time in many countries. Christmas cake is an English tradition that began as plum porridge. A traditional English Christmas Cake is made with rich, moist currants, sultanas (golden raisins) and raisins which have been soaked in rum. If a Christmas cake is covered in icing, it is quite common for it to be decorated - models of houses, of fir trees or of Santa Claus may be in the array of decorations. A particular favourite of many is the traditional Scottish Christmas cake, the Whisky Dundee. As the name implies, the cake originated in Dundee and is made with Scotch whisky.

Sugar

Sugar refiners and manufacturers of sugary foods and drinks have sought to influence medical research and public health recommendations, with substantial and largely clandestine spending documented from the 1960s to 2016. The results of research on the health effects of sugary food and drink differ significantly, depending on whether the researcher has financial ties to the food and drink industry. A 2013 medical review concluded that "unhealthy commodity industries should have no role in the formation of national or international NCD non-communicable disease policy".

Potato

Bauernfrühstück (literally farmer's breakfast) is a warm German dish made from fried potatoes, eggs, ham and vegetables. Cepelinai is Lithuanian national dish. They are a type of dumpling made from riced potatoes (see Potato ricer) and usually stuffed with minced meat, although sometimes dry cottage cheese (curd) or mushrooms are used instead. In Western Europe, especially in Belgium, sliced potatoes are fried to create frieten, the original French fried potatoes. Stamppot, a traditional Dutch meal, is based on mashed potatoes mixed with vegetables.

If oral bacteria ferment carbohydrates and produce acids that may dissolve tooth enamel and induce dental decay, then sweetened drinks may increase the risk of dental caries. The risk would be greater if the frequency of consumption is high. A large number of soda pops are acidic as are many fruits, sauces and other foods. Drinking acidic drinks over a long period and continuous sipping may erode the tooth enamel. A 2007 study determined that some flavored sparkling waters are as erosive or more so than orange juice. Using a drinking straw is often advised by dentists as the drink does not come into as much contact with the teeth.

Chenin blanc

In Savennières there is a tradition of using acacia and chestnut barrels for aging; though acacia can impart a yellow tint to the wine, and chestnut barrels may add some buttery notes. The aromas and flavor notes of Chenin blanc often include the descriptors of minerally, greengage, angelica and honey. Chenin wines produced from noble rot will often have notes of peaches and honey that develop into barley sugar, marzipan, and quince as they age. Dry or semi-sweet Chenin blanc from the Loire will often have notes apple, greengage, and chalky minerals that develop into more honey, acacia, and quince aromas.

Provence

The Thirteen desserts is a Christmas tradition in Provence, when thirteen different dishes, representing Jesus and the twelve apostles, and each with a different significance, are served after the large Christmas meal. Herbes de Provence (or Provençal herbs) are a mixture of dried herbs from Provence which are commonly used in Provençal cooking. And wine. AOC Coteaux d'Aix-en-Provence was classified as an AOC in 1985. The wines of Aix were originally planted by veterans of the Roman legions in the 1st century BC, and were promoted in the 15th century by René I of Naples, the last ruler of Provence.

These pigs are caught and used for the cured ham dish jamón ibérico. The higher the percentage of acorns eaten by the pigs, the more valuable the ham. For example, jamón ibérico from pigs whose diet consists of 90% acorns or more can be sold for more than twice as much as ham whose pigs ate on average less than 70% acorns. In the US, jamón ibérico directly from Extremadura, with bone, was illegal until around 2005. At that time, enough US restaurants were in demand for the delicacy that Spain decided to export it as boneless, which the US Department of Agriculture's health codes would approve (and continue to do).
