The most prevalent butcher's meats were pork, chicken and other domestic fowl; beef, which required greater investment in land, was less common. Cod and herring were mainstays among the northern populations; dried, smoked or salted, they made their way far inland, but a wide variety of other saltwater and freshwater fish was also eaten. Slow transportation and food preservation techniques (based on drying, salting, smoking and pickling) made long-distance trade of many foods very expensive. Because of this, the nobility's food was more prone to foreign influence than the cuisine of the poor; it was dependent on exotic spices and expensive imports.

Poultry by-product meal

Poultry by-product meal (PBM) is a high-protein commodity used as a major component in some pet foods. It is made from grinding clean, rendered parts of poultry carcasses and can contain bones, offal and undeveloped eggs, but only contains feathers that are unavoidable in the processing of the poultry parts. Poultry by-product meal quality and composition can change from one batch to another. Chicken by-product meal, like poultry by-product, is made of "dry, ground, rendered clean parts of the chicken carcass" according to AAFCO and may contain the same ingredients as poultry by-product. Chicken by-product can vary in quality from batch to batch.

The raising of poultry for eggs and meat is prevalent. One area where production infrastructure has progressed rapidly is the poultry sector. The face of the industry has now been transformed dramatically so that the entire supply chain process can take place domestically. Iran has also a large dairy industry and imported close to two million tonnes of feed grain annually in 2006. The raising of pigs is forbidden in Iran due to Islamic law. Production of livestock increased over the past three years to reach 11.3 million tons in 2008 from the 10.6 million tons in 2007, and 9.9 million tons in 2006. Meat processing capacity is at 400,000 tons and 140 production units (2009).

As a country with an Islamic majority, Muslim Albanians follows the dietary law called halal which forbids the consumption of pork. Many cultures consume blood as food, often in combination with meat. The blood may be in the form of blood sausage, as a thickener for sauces, a cured salted form for times of food scarcity, or in a blood soup. This is a product from domesticated animals, obtained at a place and time where the blood can run into a container and be swiftly consumed or processed. In many cultures, the animal is slaughtered. In some cultures, blood is a taboo food. Blood is the most important byproduct of slaughtering. It consists predominantly of protein and water, and is sometimes called "liquid meat" because its composition is similar to that of lean meat.

Apart from testing and analyzing food products during the whole production process to ensure safety and compliance with regulatory standards, Trading Standards officers (in the UK) protect the public from any illegal use or potentially dangerous mis-use of food additives by performing random testing of food products. There has been significant controversy associated with the risks and benefits of food additives. Natural additives may be similarly harmful or be the cause of allergic reactions in certain individuals. For example, safrole was used to flavor root beer until it was shown to be carcinogenic.

After the first three chambers, food moves into the abomasum for final digestion before processing by the intestines. The abomasum is the only one of the four chambers analogous to the human stomach, and is sometimes called the "true stomach". Other than forage, the other staple feed for sheep is hay, often during the winter months. The ability to thrive solely on pasture (even without hay) varies with breed, but all sheep can survive on this diet. Also included in some sheep's diets are minerals, either in a trace mix or in licks. Feed provided to sheep must be specially formulated, as most cattle, poultry, pig, and even some goat feeds contain levels of copper that are lethal to sheep.

Salt is present in most foods, but in naturally occurring foodstuffs such as meats, vegetables and fruit, it is present in very small quantities. It is often added to processed foods (such as canned foods and especially salted foods, pickled foods, and snack foods or other convenience foods), where it functions as both a preservative and a flavoring. Dairy salt is used in the preparation of butter and cheese products. Before the advent of electrically powered refrigeration, salting was one of the main methods of food preservation. Thus, herring contains 67 mg sodium per 100 g, while kipper, its preserved form, contains 990 mg.

The remaining growers increasingly rely on sales of oil for their profit, although, leather, eggs, and meat are also sold. Emus are farmed primarily for their meat, leather, feathers and oil, and 95% of the carcass can be used. Emu meat is a low-fat product (less than 1.5% fat), and is comparable to other lean meats. Most of the usable portions (the best cuts come from the thigh and the larger muscles of the drum or lower leg) are, like other poultry, dark meat; emu meat is considered for cooking purposes by the US Food and Drug Administration to be a red meat because its red colour and pH value approximate that of beef, but for inspection purposes it is considered to be poultry.

The name "Buffalo" is now also applied to other spiced fried foods served with dipping sauces, including boneless chicken "fingers", chicken fries, chicken nuggets, popcorn chicken, and shrimp. It also describes other dishes, such as pizza, that are seasoned with the Buffalo-style sauce or a Buffalo flavor seasoning. There are several different claims about the invention of Buffalo wings. One of the claims is that Buffalo wings were first prepared at the Anchor Bar in Buffalo, New York, by Teressa Bellissimo, who owned the bar with husband Frank in 1964. At the time chicken wings were inexpensive and undesirable, primarily being used for stock or soup.

The kidneys, like other offal, can be cooked and eaten. Kidneys are usually grilled or sautéed, but in more complex dishes they are stewed with a sauce that will improve their flavor. In many preparations, kidneys are combined with pieces of meat or liver, as in mixed grill. Dishes include the British steak and kidney pie, the Swedish hökarpanna (pork and kidney stew), the French rognons de veau sauce moutarde (veal kidneys in mustard sauce) and the Spanish riñones al Jerez (kidneys stewed in sherry sauce). Note 1: The renal artery also provides a branch to the inferior suprarenal artery to supply the adrenal gland.
