Pico de gallo, also called salsa fresca or salsa cruda, is a type of salsa commonly used in Mexican cuisine. In many regions of Mexico the term refers to any of a variety of salads (including fruit salads), salsa, or fillings made with tomato, tomatillo, avocado, orange, jícama, cucumber, papaya, or mild chilis.
In English, especially in the United States, when the word "salsa" is used in an unqualified manner, it refers to the spicy tomato-and-chili-based preparation known as salsa roja, salsa picante or salsa cruda, as adopted from Mexican cuisine.
